Pumpkin Chocolate Chip Muffins
My dear friend Alisha in London requested this recipe so I thought I’d share it on here for your baking pleasure…these are so yummy- especially with a hot cup of coffee.
Pumpkin Chocolate Chip Muffins
Ingredients:
3/4 cup sugar (or 1 cup brown rice syrup and omit the water, but sugar works a bit better)
1/4 cup oil
2 eggs
3/4 canned or fresh cooked & pureed pumpkin
1/4 cup water
1 1/2 cups whole wheat flour (or white if you don’t have whole wheat)
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground nutmeg
1/2 tsp cinnamon
1/4 tsp salt
3/4 cup dark chocolate (or semi-sweet if you prefer) chips
Directions:
Preheat oven to 400 degrees. Prepare muffin pans with grease or liners. Mix sugar, oil, and eggs. Add pumpkin and water. In seperate bowl, mix together the flour, baking soda, baking powder, spices, and salt. Add wet mixture and lightly stir in chocolate chips. Fill muffin cups 2/3 full with batter and bake in preheated oven for 20-25 minutes. Makes one dozen.




YUMMY. I’ve been wanting to make something “pumpkin” and this sounds perfect. Louie doesn’t care for chocolate - so I can omit them from some of them.
p.s. We bought a Jack LeLane Juicer yesterday (yay) so we’ll be getting into lots of different juices.

I’d post more pics if I knew how….unfortunately I’m the technologically challanged one in our household and Andrew has to help me with it!:) I really should learn how though….

I used the recipe and made a whole pumpkin chocolate chip loaf and it was great! Thanks Jess.
