Saturday morning
Snow is starting to fall lazily down to the ground, we’re due for 3-6 inches by tomorrow morning. I made Orange Chocolate muffins* which went perfectly with a hot cup of coffee.
Jude was a great helper!
Andrew and Jude spent a little time catching up on the latest Newsweek…
And now the Little One is down for a nap and I’m off to catch up on some reading of my own and watch the snow fall. Happy Saturday!

Orange Chocolate Muffins
1 medium size orange, scrubbed and dried
5 oz bittersweet chocolate (or chocolate chips work just fine)
1/2 cup sugar
1/4 cup honey
1/2 cup butter (1 stick) room temp
2 large eggs
1/2 cup plain or vanilla yogurt
juice from the orange with pulp (about 1/2 cup- a little less is fine)
1 tsp baking powder
1/2 tsp baking soda
1 cup whole wheat flour
1 cup white flour (you can use all white if you prefer)
Heat oven to 375 degrees. Grease muffin cups or line with baking cups.
Finely grate orange peel- trying to get just the orange part, then squeeze out all the juice- about 1/2 cup.
Chop chocolate with a sharp knife if using a chocolate bar.
Beat sugar and butter in a large bowl until pale and fluffy. Add eggs one at a time and mix well. Add orange peel.
Add yogurt, orange juice, baking powder, and baking soda and mix very well.
Sprinkle flour over liquids, then chocolate, and fold gently, just enough to blend in flour.
Scoop batter into muffin cups and bake for about 15 minutes. Turn out onto wire rack to cool. Goes really well with a hot cup of coffee or strong tea.
