Milk & Cookies

It must be all the snowy cozy weather making me want to bake all the time! I made some Oatmeal Chocolate chip & Pecan cookies last night that turned out oh-so-good with a glass of milk.
Here’s the recipe…

Oatmeal Chocolate chip & Pecan cookies

Preheat oven to 350 degrees, grease cookie sheet.
Beat together:
1 stick softened butter
1/4 cup sugar
1/4 cup agave
2 Tbs honey
(you can use 1 cup sugar instead, or 1/2 cup honey and 3/4 cup sugar.)

Add 2 eggs and mix well.
Mix in 1 cup whole wheat flour and 3/4 cup white flour (or all white if you prefer)
Add 1 tsp baking soda, 1 tsp salt, 1 cup rolled oats, 1/2 cup pecans, and about 1 cup chocolate chips.
Stir well and drop tablespoonfuls onto cookie sheet. Bake for about 9 minutes. Cool on wire rack. Delish!
Since Andrew doesn’t crave sweets like I do, I usually make a small batch and then scoop tablespoonfuls onto another greased cookie sheet, freeze, and put them in a freezer bag or container and store in the freezer until we want more.
